Ok, Menu for Sunday dinner is set.

I'm doing Herb Roasted Chicken (a recipe from Epicurions--basically a paste of rosemary, thyme, garlic, and olive oil on chicken, then baked). I'm going to use a combination of skinless, bone-in thighs and drumsticks. Hopefully it won't get dry without the skin--that's my only concern.

Also, roasted broccoli (from this site; I cooked it once for my dad and remembered that he really liked it) and baked acorn squash.

Dessert will be gingerbread cake with whipped maple cream and sliced pears.

Whew.

I'd be happy to eat it. Could you roast with skin on and then remove?

Put some of the seasoning under the skin before roasting so the flavor would be there.

 
The chicken should not get dry if you baste it a few times. The menu sounds delicious.

 
Amanda, your list said "no white flour products." What's in your gingerbread? I really like

the photography and recipes in Roost, a website that Traca pointed out to us. Her husband has IBS and so her recipes are all grain-free. Typically, she uses almond meal.

This week she has a ginger cake loaf. It might be nice to make the mini-loaves and send one loaf home with your father.

Spiced Ginger Cakes
(makes 2 mini loafs or 1 regular loaf)

2 1/2 cups almond flour
1/2 tsp salt
1/2 tsp baking soda
1 1/2 tsp ground cinnamon
1 1/2 tsp ground nutmeg
1 1/2 tsp ground allspice
4 tsp ground ginger
3 eggs
1/2 cup honey
1/2 cup ghee, melted (or butter or oil of choice)

Preheat oven to 350F. Combine dry ingredients in a bowl. Combine wet ingredients in a seperate bowl. Using a whisk or spatula mix wet and dry ingredients until combined. Pour into greased pan(s). If baking in mini loaf pans bake for 40 minutes. If baking in a regular loaf pan you may need to bake for about 1 hour. If tops begin to get too brown lay a sheet of foil on top to prevent burning (I had to do this after 30 minutes).

Remove from oven and insert a toothpick in center, if it comes out dry they are done baking. Allow to cool for one hour before removing from pan. Enjoy!

You found my one weak link, Marilyn.

I was wondering what to do about that, so thanks so much for this idea. Can I do a 1:1 sub of almond flour for regular flour? Or I can just use your recipe, so thank you so much for including that.

My other thought was to do poached pears for dessert, with the gingerbread as just a side thing. I might try that--I've always wanted to do that.

Marilyn - thanks for the link to Roost - I must've missed the first time

not only does this look wonderful, but in reading their story saw her husband has Crohn's. That's what DDH passed away from. Today is his birthday. Not to be Debbie Downer, but how weird is that? That I read this today?
