Ok, now that it's the weekend, what is your breakfast going to be? Different from post 999 I bet!

I usually decide at the last minute, but maybe Banana Stuffed French Toast from Bon Appetit.

The only problem is I don't have a waffle iron. I was hoping to find a less expensive cast-iron stovetop one because I don't anticipate using it too often and I don't have much storage, but all I find are electic ones. I haven't tried ebay yet but I'll keep looking.

 
I am a creature of habit; my breakfast rarely changes. Sometimes

my husband will make waffles or pancakes. But usually we stick with the toast or cereal. Boring, I know. smileys/wink.gif

 
Sunday I'm making breakfast - poached eggs over sauteed spinach and cherry tomatoes>>>

it's so easy and feels indulgent even though it's really good for you.

I saute a bunch of super clean spinach in a little olive oil with a dash of garlic powder, salt & pepper until tender and done. Place this into two small oval ramekins and keep warm in the oven.

Saute one basket (1 pt?) of stemmed cherry tomatoes in olive oil, with salt & pepper, and fresh basil if you have it, otherwise, a dash of garlic powder again, until the tomatoes are soft and just barely bursting through their skins. arrange over spinach in ramekins.

Poach the eggs as you normally would (I use my 2 qrt saucepan, filled about 3 inches of water, bring to a boil, reduce to medium, toss in 1/4 cup or more cider vinegar, break in eggs and poach 4 minutes for extra large - slightly longer for jumbos (I don't like the yolk too liquid). drain on a papertowel, and put on top of tomatoes & spinach. add salt & pepper and serve with buttered toast!

we also always have Ramos fizzes with our Sunday breakfast. can't wait to clock out tonight and start the weekend!

 
Joe, I really like my Villaware Belgian Waffle maker, it's foolproof and stores well>>>

it stands up on its side for storage - pretty nifty. the best part is that it gently beeps when the waffles are done, and reminds you a few times if you don't open it up. for me, in the morning, sometimes I just forget about it, and it's so helpful to hear the beeps. funny though - it sounds like a mini toy car is backing up!

 
oops, forgot to say that I saw this recipe in Martha Stewart Living over Christmas >>>

it may be an older issue than that since my mom saves them up for me to read when I visit! I don't like her website anymore so I don't have the original recipe....

 
Our waffle maker is older than I am...

...and we love it. It's one of those heavy-duty ones from the 1950s-60s. Fabulous waffles. My father in law has a Belgian waffle maker, but none of us like it as well as the other one. Hold out for one of the classic models on eBay.

Hmmm. Maybe I can get my husband to make waffles tomorrow...smileys/wink.gif

 
Joe, Michael's waffles are worth investing in a waffle iron. They are really

rich -- so are supposed to be a sometime treat, but we are making them too regularly and since they freeze really well, we are often popping them in the toaster oven during the week! How decadent! My hubby grins ear to ear while he's eating them (smothered in maple syrup, sliced strawberries and bananas).

 
I'm going to make a big batch of chocolate chip scones . We'll probably eat

them with fresh sliced strawberries and big mugs of hot tea (It was 50-some degrees on Thursday and absolutely freezing today). I buy the whipping cream when I am at Costco -- so much cheaper and then I just use it all to make several batches of scones. The leftovers freeze well.

 
Thank you ladies for your suggestions. I saw two cast-iron waffle irons on ebay for $10 $12,

plus a third for $59. Makes me wonder what's wrong with the first two! I'm sure Michael's recipe is worth the price of any waffle iron, but can my waistline afford it?

 
I bought two standard, round stainless steel USED ones at my local...

...thrift store for $3 each.

Cleaned them up and they crank 'em out!

No on the waffles, yes n the muffins. We will be digging in to a batch of Banana Crunch Muffins fro

the freezer tomorrow morning.

I don't freeze the waffles, because I make Belgian-style, and they don't hold up well, crispness-wise, much after you take them out of the iron.

I also make a batch of pancakes for my son, and keep the extras in the fridge for the week. He goes on food jags, and pancakes have been the breakfast fav for about the past 3 or 4 months.

Oops, didn't mean to hit the "post" so quickly, and I didn't realize the first one posted and I 'could'a edited it until I posted the second one. Sorry!

Saturday was a bran muffin, Greek yogurt, half a grapefruit, one scrambled egg, oatmeal sprinkled with brown sugar and cinnamon, and GFIC orange cappacino-something.
