I *know* I started this thread a bit early but actually I'm planning a birthday dinner and a Valentine's menu would fit the bill perfectly so I thought I'd get everyone thinking early. smileys/smile.gif

hi marg - i'm just offering the meal pkg as part of my farmer's mkt food, & then

if people who see the ad on my website/store want to order it, i don't mind doing up a bunch of them. i similarly had an appetizer platter special for the holidays smileys/smile.gif

well...........not so much, in these parts>>

I'm still 'getting myself known' here - I'm slowly building up a loyal clientele, & they're willing to pay for food they like. i am also trying to attract new customers, so that i can start putting together packages like this for any occasion/time of year.

i know people on the boards have commented on my catering prices being low, but honestly, they are higher than other established/popular caterers offering the same types of food.

 
Red velvet cake. Not sure what else, but that's a definate dessert. REC inside.

The frosting is GREAT!

1 1/2 cups granular sugar
1 1/2 cups oil
2 whole eggs
1 1/2 ounces red food coloring
Dash salt
1 teaspoon vanilla

Add ingredients together in a large bowl and mix until combined.

Next, sift together:
2 3/4 cups all purpose flour and 2 Tablespoons cocoa

and then add to oil/sugar mixture, alternately, with 1 cup buttermilk.

In a separate bowl, mix together:
1 teaspoon soda
1 teaspoon vinegar

Add to batter and blend well.

Pour batter into two greased and floured 8" round cake pans and bake for 30 minutes at 325 degrees F.

Let cake cool and the frost it with:

Cream Cheese Frosting

1 8-ounce package cream cheese
1/2 stick butter
1 box confectioners sugar
1 teaspoon vanilla

Combine ingredients in a bowl and mix until creamy. Recipe makes enough frosting to ice cake completely.

NOTE: Recipe can also be cooked in a 9" x 13" baking dish.

 
Ang, I looked at those not long ago but after reading the reviews

I decided to do a different recipe. It seems the filling needs some modifications to make it less oily and salty. Let us know how you make out if you try it.
