OK, you can laugh now......I was wondering this afternoon what to have for dinner...I saw a

commercial on tv for macaroni salad. The thought that crossed my mind was "they find all kinds of ways to make macaroni salad".....

my brain kicked in to overtime...we had chinese last night...I didn't finish my Gen Tso chicken and my husband doesn't care for it. I had tzaiki sauce left from a greek dinner I fixed one night and I had some rutabagas and apple from another meal......

I used to save leftovers and make soup. Not today.....I mixed it all together in the food processor. In the meantime I cooked the macaroni, then I mixed it all together. Then I had partial packages of swiss, colby and cheddar, so I shredded them all into and on top of the 'casserole'.

My husband wasn't excited at all about eating it but once he tasted it he was intrigued and actually liked it. I am laughing at myself because I never dreamed it would be that good either!

All this, to hopefully give someone a good hearty laugh and maybe someone else an idea on what to do for dinner with leftovers.....

 
LOL! I can say one thing, you're inventive, and that's a good thing...hey you liked it! What else

We had "leftover night" tonight, on the raclette grill...

An assortment of sliced cheeses, vegetables, meats and whatever else needed to get eaten. A mix and mash of anything and everything, no two bites the same. It's fun when that stuff turns out!

The hit of the night was to take a very thin slice of pancetta and place it on the raclette grill for a few seconds. When some of the fat has melted, move it aside and place a 1/2" thick slice of polenta on top of the pancetta grease. Allow to grill to light brown, turning once. When the polenta and pancetta are both lightly browned, place the polenta in the raclette pan and top with crisped pancetta, then top with a slice of tomato & basil havarti cheese. Run under the raclette grill until cheese is bubbly. YUM!

 
i was gonna try it til i saw that all my leftover...

meat was green and all the veggies were blue (sort of).
