Shape crumb mixture into balls, using one rounded tablespoonful for each. Wrap each ball with half a bacon slice; secure with toothpick. Place on a wire rack set in a pan. Bake in 375° for about 30 minutes or until bacon is brown. Serve immediately.

3 boneless skinless chicken breast halves (about 2 pounds total)
15 slices bacon (about 3/4 pound)
1 teaspoon black peppercorns -- coarsely crushed
Preheat oven to 400°F.
In a small saucepan of boiling water blanch basil 2 seconds and drain in a sieve.
Rinse basil under cold water to stop cooking and pat dry on paper towels.
Put 1 whole chicken breast, skinned side down, on a work surface and remove "tender" (fillet strip located on either side of where breast bone was) from each breast half, keeping rest of chicken breast intact.
(There should be 2 tenders from each whole breast.).
Put 2 tenders side by side and wrap 7 basil leaves around them to enclose them.
Season remainder of whole breast with salt and pepper and put basil-wrapped tenders lengthwise down middle of 1 breast half.
Fold other breast half over to enclose tenders.
Beginning on underside at 1 end of breast, wrap bacon slices snugly but without stretching, 1 at a time, around breast in a continuous overlapping spiral from 1 end to the other. (You will need about 4 to 5 bacon slices for each breast.).
Remove tenders from remaining 2 chicken breasts and stuff and wrap breasts in same manner.
Sprinkle crushed peppercorns evenly over bacon wrappings.
Heat a 9- to 10-inch cast-iron skillet over moderately high heat until hot.
Sliding a metal spatula under wrapped chicken breasts to keep bacon intact, transfer 2 breasts, undersides down, to skillet.
Cook chicken, turning it only after bacon on underside is golden, until bacon is golden and crisp on all sides, about 4 minutes total.
Transfer chicken as browned to a plate and cook remaining breasts in same manner.
Pour off fat from skillet and return all 3 chicken breasts to skillet.
Roast chicken in middle of oven 15 minutes, or until firm to the touch and just cooked through.
Transfer chicken with tongs to a cutting board and let stand 10 minutes before slicing.

Wrap around an apricot and secure with a toothpick.
Bake at 350 degrees for 20 minutes or until bacon is crisp.
DIPPING SAUCE:.
Mix together soy sauce, brown sugar and ginger.
Put in a small bowl to dip apricots when serving.
VARIATIONS:.
Bacon wrapped green olives- Bake as above.
Bacon and peanut butter wraps- spread peanut butter on bacon slices, roll up, spear with a toothpick and broil until crisp.

10 cherry tomatoes -- on the vine (10 to 12)

Pre-heat the oven to 190C/375F/Gas 5.
Lightly oil an oven proof dish with the teaspoon of olive oil - using a pastry brush is best.
Place one chicken breast between a large piece of cling film and gently beat it with a cook's mallet - beating until large and fairly thin - try NOT make any holes in the chicken! Repeat with the second chicken breast.
Place the chicken breasts on to a work board and spread half the Boursin cheese on each chicken piece - make sure it is spread evenly right up to the edges.
Roll the chicken breasts up - tucking the last small "fillet" flap up and into the stuffed roll.
Wrap the bacon pieces or pancetta ham around the stuffed chicken, making sure they do not overlap too much and the edges are sealed underneath.
Gently lift them into the oiled oven dish.
Season well with freshly ground black pepper. (Season with salt to taste - the bacon will make it quite salty, so watch out when seasoning with salt.).
If using the lemon juice, pour over the top of the chicken breasts now.
Scatter or arrange the cherry tomatoes around the chicken pieces.
Place in the middle of a pre-heated oven and roast for between 45 - 60 minutes; depending on the size of the chicken breasts.
Serve with a selection of vegetables and a jacket potato, making sure you spoon the excess Boursin sauce over the top of the chicken pieces and the roasted cherry tomatoes!
TO FREEZE:.
As soon as you have stuffed and wrapped the bacon around the beaten chicken breasts, wrap individually in cling film and put into a freezer container or a freezer bag. Take them out as required and allow to defrost for 4-5 hours at room temperature or overnight in the fridge.
Cook as above.
Can be frozen for up to 3 months with no adverse effects on the Boursin cheese.

A couple of hours before grilling, put the chicken breast between two pieces of plastic and pound it flat. (T uses a wine bottle.)
Spread on some goat cheese and pesto
Add capers and salt & pepper. Add chopped oven-dried tomato and toasted pinenuts if using.
Roll into tight logs and wrap with bacon.
Wrap each log tightly with plastic and refrigerate for at least two hours.
Barbecue at medium heat with the lid down. Turn the logs to get bacon crispy all over. It’s done when the bacon is crispy and golden.
Serve sliced, either hot or cold. This is great picnic fare!

Best Ever Skirt Steak and Bacon Wrapped Chicken Kabobs Recipe #167880

4 boneless skinless chicken cutlets
1 1/2 cups teriyaki sauce (I recommend SoyVay with sesame seeds)
3 tablespoons sesame seeds (if needed)
1 cup white vermouth (sherry may work too)
5 tablespoons garlic -- chopped
1 onion -- diced
8 slices bacon (or whatever you need to wrap chicken)
lemon juice
Trim all excess fat from skirt steak and slice into kabob sized slices. (I made mine about 1 inch thick so they would come out medium-well when done) Cut chicken into pieces that corresponds to the cooking time of the steak. (Again, mine were about 1 1/2 inch cubes).
Combine teriyaki sauce, vermouth, garlic and onion in a large bowl. Add meats and marinate 4-6 hours, turning occasionally. Meanwhile, soak wooden skewers in water until ready to make kabobs.
When ready, wrap 1/2 slice bacon around each piece of chicken. Make kabobs by alternating steak and chicken on skewers, making sure to stab through the bacon to keep it wrapped around the chicken.
Cook over med-high heat on BBQ, turning once, cooking about 15 minutes total. Baste with leftover marinade, and squirt with lemon juice during cooking.
If you cant find teriyaki sauce with sesame seeds, add lots of sesame seeds to the marinade -- I dont know if it makes a difference, but why take the chance for such a small thing. I found Soy Vay to be the absolute best brand of teriyaki sauce.
Time does not include marinating time, but the prep is so quick that I did all of it while getting my kids out the door for school in the morning. Then, after setting up the kabobs I refrigerated them until ready to cook that evening.

Chipotle Lime Bacon-Wrapped Shrimp

Zest from 1 lime
Juice from one lime (about 2 Tbsp)
1/4 teaspoon chipotle powder (or more to taste)

Skewers (for grilling) or toothpicks (for oven)
Mix together in a small bowl the lime zest, lime juice, olive oil, and chipotle powder. Put the shrimp in the lime chipotle mixture; make sure each piece is well coated.
Prepare grill on high, direct heat (if grilling) or preheat the oven to 450°F.
Working one at a time, wrap a half piece of bacon around each piece of shrimp. If you are grilling, thread the shrimp onto long, flat skewers (flat skewers make turning the shrimp on the grill easier). If you don't have flat skewers, I've used two thin bamboo skewers (soaked in water for 30 minutes beforehand) to the same effect. If you are using the oven, secure each the bacon onto the shrimp with toothpicks. Place the bacon-wrapped shrimp on a slotted baking pan (lined with foil inside for easy cleaning). Brush remaining lime chipotle mixture on the outside of the bacon-wrapped shrimp.
Grill uncovered for 5 to 7 minutes on each side, or bake in the oven for 10-14 minutes, until shrimp is pink and the bacon is crisp.
Makes 12 pieces.

1 pound butter
3 sprigs thyme
10 strips bacon (not thick cut) -- room temperature (10 to 15)
5 tablespoons mascarpone cheese -- room temperature, seasoned with salt and pepper
Preheat the oven to 350 degrees.
Cut the stems off figs. In a pot, melt the butter and combine with the chicken stock and thyme. Place the dried figs in another pot and pour the liquid overtop. Set the pot over medium heat and bring the liquid to a boil. Immediately reduce the heat to a simmer and cook for 30 minutes, or until the figs are plump. Remove the pot from heat and let the figs cool in the liquid. Remove the figs from the liquid (when the liquid is cool, you can strain out the butter solids and use the remaining fig syrup as a condiment with meat or fish, or whisked into salad dressing).
Lay out a piece of bacon, place the fig stem side down and roll the bacon around the fig (You will have to rotate the fig in order for it to get completely wrapped.) Depending on the size of the fig, wrap it with either a half- or full-sized strip (it needs to be completely covered).
Place the figs in a saute pan over medium heat (Put them seam side down so they don’t come unraveled). Cook until they are browned on all sides. Place the pan in the oven and cook for 5 minutes more.
Arrange the figs around a pool of the mascarpone cheese and serve.

2 tablespoons Worcestershire sauce
2 tablespoons lemon juice
1 pound boneless chicken breasts -- cut into 1" cubes
12 ounces bacon strips -- cut in half
Hot cooked rice
In a medium saucepan, thoroughly combine sauce, Worcestershire sauce and lemon juice. Remove 1 cup sauce mixture and place in a sealable plastic bag with chicken cubes. Marinate chicken in the refrigerator for 1 hour or longer.
Preheat grill or broiler.
Remove chicken from marinade; wrap with bacon and place on skewers. Discard remaining marinade. Grill or broil 10 to 15 minutes or until chicken is thoroughly cooked. Heat remaining sauce in a saucepan and serve with chicken. Serve kebabs over rice.

1/4 teaspoon paprika
1 dash fresh ground pepper
1 dash cayenne pepper

Dipping Sauce
1/3 cup ranch dressing
1/4 teaspoon dried cilantro
5 pieces thin sliced bacon
5 large shrimp
3 slices fresh jalapenos
1 ounce monterey jack pepper cheese
Preheat oven to broil.
Make the seasoning blend by combining the ingredients in a small bowl. Set this aside.
Make the dipping sauce by combining the ranch dressing with cilantro in a medium bowl.
Cook the bacon in a frying pan over medium/high heat, but don't cook it all the way to crispy or brown. About 3 minutes per side.
When bacon is done drain on paper towels.
Shell the shrimp, leaving the last segment of the shell and the tail.
Remove the dark vein from the back of the shrimp, and then cut down into the back of the shrimp, without cutting all the way through, so that the shrimp is nearly butterflied open. (This will make a pocket for the pepper and cheese).
Pour 1 cup of water into a small bowl.
Add the shrimp and jalapeño peppers and microwave for 60 to 90 seconds.
Shrimp should be starting to firm up and change color.
Immediately pour the water out of the bowl, remove the jalapeño slices and pour cold water over the shrimp.
Place the shrimp and jalapeño pepper slices onto paper towels to drain off excess water.
Build the appetizer by cutting the jalapeño slices in half and removing the seeds.
You should now have 6 jalapeño slices. You'll need 5 of these.
Place one slice into the slit on the back of a shrimp.
Cut an inch-long chunk of cheese (about 1/4 inch thick), and place it on the jalapeño slice.
Wrap a piece of bacon around the shrimp, starting where the cheese is.
Start wrapping the thinnest end of the bacon.
Go 1 1/2 times around the shrimp and then cut off the excess bacon and slide a skewer through the shrimp, starting with the end where the cheese is and piercing the cut end of the bacon on the other side.
Repeat with the remaining shrimp and slide them onto the skewer with the tails facing the same direction.
Put the skewer onto a baking sheet or broiler pan and sprinkle a very light coating of the seasoning blend over the shrimp, then broil for 3 to 4 minutes or until the bacon begins to brown and the cheese begins to ooze.
Serve over a bed of rice if desired.

1 pound pitted dates -- slit lengthwise
1 8-ounce can sliced water chestnuts -- drained
1 pound bacon -- cut in half lengthwise, then cut into thirds
In small bowl, pour Teriyaki Marinade; set aside. Place one water chestnut in each date. Wrap one piece bacon around date, securing with a wooden pick. Dip into Marinade and place on broiler pan. Continue until all rumaki are assembled. Broil, turning once until bacon is crisp, about 4 minutes on each side.
