I'm enjoying "Made in India" --a cookbook about family meals written by a London cook, via her family ties in India and Africa.
I loved the sound of "Roasted Tamarind Chicken with Honey and Red Chili" and decided to try that. Only I didn't quite follow the recipe as is my wont. (This is where the elders of the tribe shake their wizened heads and edge slowly away from the fire pit.)
14 oz bone-in thighs
1/2 tsp chili powder
1 tsp salt
1/2 tsp ground black pepper
1.5 tsp tamarind paste
2 cloves garlic, smashed
3 TBL honey
Massage into chicken thighs and bake at preheated 350 degrees for 25 minutes or until done.
Okay...do THAT if you want it to work.
If you don't:
I'm never sure about powdered chili--sometimes it's bitter--so I used harissa instead.
I'm wary of honey because sometimes it's flavor is too strong, so I used agave instead.
I'm not crazy about garlic so I only used one small clove.
Then, instead of just rubbing it on, I left it overnight to marinate.
Then, instead of baking it gently in the oven, I decide to cook stovetop since I've had so much success with those herbed chicken thighs.
I put the thigh in the pan at low/medium, set the timer for 20 minutes and walked away. When the timer went off, I returned to--not the crispy golden chicken skin I have come to know and love--no, I came back to a blackened, charred piece of inedible meat.
Ah, my mind immediately thought: there was no oil in the marinade, but loads of sugar.
...which begs the question: Okay, so WHY didn't my mind think of this 20 minutes earlier?
I'm going to salvage this fiasco by contacting NASA and Tyson with a new shuttle design for high-heat thermal tiles.
