Olive Cheese Rolls......An old favourite.

From the Betty Crocker Cookbook

OLIVE CHEESE BALLS

2 cups shredded sharp cheddar cheese

1 1/4 cup flour

1/2 cup butter, melted

pimento-stuffed small olives

Make a pastry with first 3 ingredients.

Mold dough around olives, shaping into balls.

Place balls 2 inches apart on a baking sheet.

Cover and chill for 1 hour.

Heat oven to 400° F. Bake balls 15 to 20 minutes.

Serve hot.

Makes about 36.

May be frozen.

 
Interesting to learn where that recipe came from. I always have a bag frozen & sometimes friends

tell me that their moms used to make them. That would make the recipe at least 60 years old.

I have fun varying the recipe, with herbs, with goat cheese, with black olives......

 
I've done both before and after baking. If you are heating after baking they just

need about 10 minutes @ 400ºF.

To make ahead and not prebake, place unbaked olive-cheese balls on ungreased cookie sheet. Freeze at least 2 hours until firm. Place balls in plastic freezer bags. Seal, label and freeze up to 3 months. Heat oven to 400ºF. Place cheese balls 2 inches apart on ungreased cookie sheet. Bake about 20 minutes or until hot.
