OMG - Just tasted my first batch of homemade salsa - delicious!

I can't believe I haven't made it before. I made it with tomatoes and jalapenos from our garden! This will now become a staple until the season's over.

Also - picked beets from the garden this morning. Will roast them this afternoon as part of the salad (company tonight!).

Here's the menu:

Homemade salsa

mexican cheese dip (cottage cheese, sour cream, muenster, spices, scallions..)

taco chips

Plated salads - slices of: roasted beets, tomato slices, avocado, and mozzarella

Wasabi Salmon on a bed of greens w/ wasabi vinaigrette

Potato galette

Roasted green beans (from our garden) and onions

Lemon bars w/ sour cream topping

 
So what's the recipe for the salsa? I just got back from the farmers market

and I have a bunch of wonderful tomatoes and peppers and some of my purple tomatillos that I made some salsa with a couple of weeks ago and everyone raved about so I am on a salsa kick

 
No recipe - but this is what I did

Into my food processor I put in some slightly chopped jalapeno's, some chunks of tomatoes (so I cut each tomatoes into fourths - then cut each forth in half), and cilantro and processed it. And then, to taste, I added lime juice, a pinch of sugar, a splash of olive oil, and salt and pepper.

I'm going to serve it in about an hour - I'll need to drain some of the juices first. (personally - I'd like to drink it but I'm actually somewhat allergic to tomatoes - my chin breaks out. Suffice it to say that during tomato season I put drying lotion on it 4x a day and wear more make-up than usual!)

 
Deb, I bet this would be really good in the winter with the oven roasted tomatoes

you posted a while back. (I just love them and make them all the time when fresh tomatoes are not available!)

 
I thought of you today Deb when I made a papaya salsa to go on

grilled chicken patties. I know you said you had never made a salsa before and wondered if you had ever had a fruit salsa. I use whatever fruit I have (papaya, mango etc.) and add jalapenos, red or yellow bell peppers, red onion, lime juice, a dab or two of honey and salt and pepper. So good on chicken, breasts or patties.
