Make caramels, keep them on the soft side, shape, chill and dip in your fave chocolate?

I am confused. Why does she call them truffles? They look like chocolate dipped caramels to me. . . I could see if they were some sort of fluffy filling *flavored* with caramel, but. . .

Or were you talking about one of the other candies on the page?

That is what I thought too.

They just look so good. Great for Xmas. I have Gayle's recipe and will have to try them out. Not just now, I don't think I would stay within my daily WW points. smileys/smile.gif

 
Dawn, I've been reading a CIA book from the library. This recipe is similiar w/ shortbread base.

I do think you should use Gayle's temperature range, though. I'm amazed he left that out of this recipe. EVERYTHING is this book is scientifically annotated.

Of course, I wanted the precise sugar tempertature to set caramel apples and he didn't have that. Figures.
