I first had these in Canada - mmmm, good.

For crusts:

1 cup butter, softened

2 3-oz packages cream cheese, softened

2 cups flour

Blend together butter and cream cheese; stir in flour. Cover and chill for one hour, or until easy to handle. Shape into1-3/4 inch balls; press into bottoms and up sides of ungreased muffin cups.

Fill each cup with one heaping teaspoonful of raisin filling (recipe and directions follow, below). Bake at 425 degrees for 8 to 10 minutes; reduce heat to 350 degrees and bake for an additional 10 minutes. Cool slightly in muffin cups; remove and cool completely. Makes 3 dozen.

Raisin Filling:

2 eggs

2 cups brown sugar, packed

2/3 cup butter, melted

1/4 cup evaporated milk

1 tsp vanilla

2 t flour

1 cup raisins

Beat together eggs, brown sugar, and butter in a small bowl. Stir in remaining ingredients.

Tarts - Heavenly Butter Tarts


½ cup butter or margarine
1 cup corn syrup
2 eggs (slightly beaten)
½ cup brown sugar
½ teaspoon vanilla
1/4 teaspoon salt
½ cup raisins
½ cup walnuts, chopped

Place frozen (or make your own) butter tart shells on cookie sheet.

Put raisins into boiling water for approximately 10 minutes.

In a bowl, add softened butter, brown sugar, salt and syrup - mix well.

Drain boiled raisins and add to mixture.

Continue to stir until butter has completely melted and sugar is dissolved.

Add lightly beaten eggs, vanilla - stir. Add chopped walnuts. Spoon into butter tarts.

Bake at 350 degrees for 20 minutes or until crust is golden brown.

Base Ingredients:
1/2 cup of soft butter
1 cup of all purpose flour
2 tablespoons of white sugar

Filling Ingredients:
1 & 1/2 cups of brown sugar
1/2 cup of raisins (more or less)
1/2 teaspoon of baking powder
1 cup of chopped walnuts (optional, pecans would be good too)
3 eggs
3 tablespoons of flour
1 teaspoon of vanilla

Preheat oven to 350 degrees.

Beat the butter with the flour & sugar until well blended. Press mixture firmly into an UNgreased 9" square baking pan; bake for 15 minutes at 350 degrees F.

Meanwhile, stir together all the filling ingredients.

Remove the base from the oven & gently spread the filling over the hot base. Return to the oven and continue to bake for an additional 20-25 minutes until the filling is a deep golden brown.

Filling may be slightly jiggly in the center, but will firm upon cooling. Cool completely in the refrigerator and cut into squares or bars.

Makes 16 per pan - these also freeze well.
