and I am doing a pie theme. Any ideas? So far, Bub is making his famous apple pie, and that's it. I am going to buy a Marie Callendar's Chocolate something pie (because, I love it), and any ideas? These kids are all great eaters and will eat almost anything. It should be a fun night,.

 
Shepard's pie knock-offs

There are all kinds of ways to do these but I think that I would use several tart or smallish pie plates with portions of nicely spiced cooked ground beef (or lamb/ground beef) crumbles and veggies (sauteed mirapoix or straight from the frozen bags), each mixed using several different types of "sauce," and topped with mashed white or sweet potatoes. Layered dip "pie"

We always serve the standard layered refried bean dip (beans, guac, taco sour cream, drained salsa, cheddar cheese shreds, green onion and black olive slices) in a pie plate with toasted tortilla chips. You could also do a heated dip in a pie plate using refried beans, cheese and chili or with totally different ingredients, like crab and cream cheese. Kind of a pie smileys/wink.gif Colleen

 
Mini cheesecake pies

You can make these from scratch using vanilla wafers for the crust but we love the boxed mix enhanced with extra cream cheese (whatever we have leftover in the drawer, softened, or part of a new brick), grated lemon peel, a squirt of lemon juice and a bit more vanilla in regular sized paper/foil cupcake liners. Sometimes, if we have it, we'll fold in a portion of freshly whipped and sugared whipped cream for the cheesecake pie version, vs. cheesecake. We add a light sprinkle of cinnamon to the graham cracker crumb "crust" and top w/fresh fruit brushed with lightly warmed jam. Colleen

 
I'm going to go another way... you have to include some kind of "orange juice", whether

it's plain ol' oj, or a side such as green beans in orange vinaigrette, etc. Maybe cookies using Michael's idea of stripes - orange stripes on a chocolate cookie? Maybe? (OJ was the orangutan, right?)

I was so tired on Friday night, that I went to the grocery store

and bought pizza pie, chicken pot pie and Marie Callander pies. I really wanted to make everything, but when it came down to it, I just couldn't since I was cooking and getting ready for the farmer's market. The kids didn't mind, and to be honest, neither did I. It wasn't perfect the way I wanted it to be, but every once in awhile, you have to resort to the easiest, and enjoy the moment surrounded around it. And we did.
Oh, and I will never buy a coconut cream pie again. I think I ate half of it.
