One handed meal?

Ok, now that I've peaked your interest... I've been racking my brain on what I can make for dinner Wed that will work for my diet and this person's newly shattered wrist.

1) I am dieting and am doing something like Aktins so no starchy carbs or sugar. Plus, I eat a salad almost everyday at work. More salad, blech.

2) They are trying to deal with using only one hand. Fingers aren't working too well there either and it will be their first day back to work.

This leaves out something simple like a steak. Every thing I can think of involves pasta or something (or mashed potatoes, mmmmm). If I have to I will eat something off plan but I'd like to not go waaay off like eating a casserole or something heavy.

I can't think of a darn thing--any ideas?

 
Hi Maria -- how about soup (gazpacho?) and fricos ... or Mexican shrimp cocktail?

These options would give you lots of veggies and vitamins, and Atkins would allow the cheesy fricos, true?

 
what about grilled skewers of veggies and chicken, fish, pork, beef. You'll be doing the prior

cutting to make it easier at the table??

 
Beef short ribs that are pre-cut. Thick cut

French fries. Cole slaw, easy to eat with one hand. Steve's wonderful sweet potato biscuits, no need for butter.

Small rice wraps stuffed with crab, shrimp or beef. One hand for the Thai dipping sauce.

 
REC: Japanese Chicken Wings (wonderful at any temperature)

Japanese Chicken Wings

4 lbs. chicken wings (use drummettes if you can find them - no cutting-up involved)
1/4 cup soy sauce
1/2 cup aji mirin (sweet rice wine)
1/4 cup sugar
1/2 tsp. crushed red pepper
1 garlic clove, crushed
1-1/2 tsp. grated fresh ginger root (don’t use powdered)

Cut each wing into 3 parts, separating at the joints (unless you are using drummettes). Throw away wing tips. In large baking pan, or two 12x8” baking dishes, combine remaining ingredients. Add wings and turn to coat well. Let marinate 1 hour at room temperature, turning occasionally. Note: you can make these in advance, cover and refrigerate for up to 24 hours.
Preheat oven to 375 deg. Bake chicken, in the marinade, uncovered, for 1-1/2 hours. Turn them over occasionally. Serve either warm or cold.

 
REC: Pan Seared Scallops with Chili Cream Sauce

Pan-Seared Scallops with Chili Cream Sauce

4 servings

1-1/2 lbs. sea scallops
2 tbl. + 2 tsp. flour, divided
1 tsp. vegetable oil
1 tsp. margarine
1 tsp. chili powder
1/4 tsp. salt
1/8 tsp. ground cumin
3/4 cup low-fat milk
2 tbl. chopped fresh cilantro, plus springs for garnish

1. Combine scallops and 2 tbl. flour in large ziploc bag; seal bag and shake gently to coat.
2. Heat oil in a 10” heavy skillet over high heat, swirling to coat bottom of pan. Add scallops and cook 2 min. on each side or until lightly browned. Remove from skillet and keep warm.
3. Melt margarine in skillet over med heat. Add 2 tsp. flour and cook 30 seconds, stirring constantly. Add chili powder, salt and cumin; cook 30 seconds more, stirring frequently. Gradually stir in milk and cook for 2-1/2 minutes or until thick, stirring often. Return scallops to pan and add cilantro; stir gently to coat.
To serve, spoon onto plate and garnish with cilantro springs if desired.

Some things your friend might have trouble with is anything requiring a can opener. That was one of the most frustrating things for me. Also anything that you have to cut up was difficult. I had this extender for silverware, like one of those pool noodles only a mini version that fit over the fork or spoon handle so that I could reach my mouth. Chopping, cutting, slicing all need two hands so depending on your friend situation, this might be one of those times when buy pre-chopped veggies from Trader Joes might be a good thing, or maybe that is something you could do would be to chop up a bunch of veggies for your friend to use to make stir frys and such. Opening jars was a hassle too, so keep that in mind. The roast chickens you can get at Costco would be easy and make a lot of meals. Some easy wraps (low carb tortillas) with some shredded lettuce (bagged type) with some chicken, cheese (bags of pre-shredded cheese) and Caesar dressing. Sliced deli meat might be something they could make wraps with also, or even quesadillas.

4 Minute Spicy Garlic Shrimp Recipe #107997

Amount Measure Ingredient -- Preparation Method

12 shrimp (Jumbo sized -- peeled, deveined, &
tails intact)
2 tablespoons olive oil
2 garlic cloves (crushed with the side of a
knife)
1/4 teaspoon red pepper flakes
1 teaspoon steak seasoning (Montreal Seasoning by
McCormick is recommended)
1 teaspoon lemons -- zest of
2 teaspoons lemon juice
1 tablespoon fresh parsley (chopped)

Heat a large skillet over medium high heat. Add olive oil, garlic, red pepper flakes, and shrimp.
Season with grill seasoning or salt & pepper. Cook shrimp 3 minutes or until just pink. Toss with lemon zest, juice, & chopped parsley. Remove shrimp to a serving platter, leaving the garlic cloves in the pan.

Preheat the oven to 450 degrees. Season the chicken all over with salt and
pepper and place in a roasting pan. Roast for 45 minutes, or until the juices run clear,
when thigh is pricked with a skewer. Transfer the chicken to a cutting board and let stand for 15 minutes.Yield: 4 servings
