One last Thanksgiving question

When they visited earlier in the month, my mom made a couple pumpkin pies and left one in the freezer. Allegedly, my kids loved it. As my mom is not known, by any stretch, as a good cook, I am surprised by that. However, as I have it in the freezer and as I am making everything else myself, I kinda want to use it. The fact that I HATE pie and won't be having any anyway, has no bearing on this decision. However, to make it a bit more palatable to my DH and BIL, I was hoping to doctor it with some fancy whipped cream. So, there is my question. What type of whipped cream would you use? I was thinking of adding some crystallized ginger to the cream but I am already making ginger cookies as another dessert and wonder if that would be too much. Any thoughts?
