orchid, we LOVED your Zucchini with Farfalle(recipe inside)

It was very good. We are having guests over this weekend and DH (- it's really weird calling this man DH, but I guess I'll get used to it *LOL*) wants us to make it again for our dinner on Saturday.

Here's the recipe for the rest of you who wants to try it:

Zuccini w/Farfalle

Serving Size : 6

1/4 cup olive oil

4 small zucchini -- cut in 1 1/2" sticks

1 1/2 large onion -- chopped

3/4 clove garlic -- minced

1/2 cup heavy cream

3/4 pound farfalle -- al dente

3/8 cup Parmesan cheese

salt and pepper

Saute zucchini in oil quickly over high heat until golden. Remove with slotted spoon and set aside.

Add onion and saute until golden. Add garlic and cook and 1 minute more. Stir in cream, increase heat and boil until sauce is reduced by 1/3. Add noodles, zucchini, Parmesan and salt and pepper. Toss thoroughly until heated thru. Serve immediately with additional Parmesan.

 
So nice to hear Eva. I'm glad you enjoyed it. Besides tasting good, one of the

things I like so much about that recipe is that most everything can be prepped in advance. That is a huge plus in my book. And then it comes together in a flash. I got that recipe from my mother probably 40 years ago and she got it from a magazine. I think when I have time I'll do a search and see if I can find the source for it. Good recipe!

 
I made it last night... it was great. Can we put it in T&T now? I added

sun-dried tomatoes to it too. Very good.

 
I'm not sure. I think it has to be a recommend by 3 people but I don't

think the original poster is included. Where's Ang when we need her...oh, that's right, putting out an incredible Oktoberfest spread or some such thing. ;0) And I'm glad you liked it.

We made it again this weekend and we added sun dried tomatoes. It worked really well. Thanks
