We've rented the entire evening and are selling tickets for a live performance. We will serve a buffet dinner of finger and fork type foods prior to the opening scene. I'm leaning towards a cold pasta salad, (since it will still be hot here) with shrimp. I'd like to put it together in the morning and take to the playhouse in the evening. Does anyone have a really yummy, tried and true, that is also pretty, so folks will be grabbing it?

I agree with Erin. This salad is wonderful. I believe Peg W. said she...

...has added teriyaki chicken strips with good success.

I'm sure you could add shrimp to this salad and do well. Boiled or grilled, the shrimp would be delicious.

The George Washingtion brown powder makes this salad stand out. Other swappers say other bouillon powders work well too. A savory beef bouillon is very good.

Like any salad, I would do my best to keep it cold.

We like to make a Caesar Salad pasta and add grilled shrimp to it>>>

I don't have a recipe, but basically, I cook linguine (but you could use any kind of pasta at all, farfalle works well too), and then chill it down tossed with about a tablespoon of olive oil to prevent sticking. I grill the shrimp, chiffonade some romaine, chop some tomatoes, and make a Caesar dressing. Toss all together and top with copious amounts of parmesan. Sometimes I add cruotons too if I have some sturdy ones around.

Edited to say that it preps well ahead, but toss just before serving. As you can imagine, the lettuce doesn't hold up overnight once put together.

Here is one I use over and over- Creamy Pasta Salad

CATHY’S CREAMY PASTA SALAD

8 oz dry pasta (bows, twists, shells, or tri-color)
1 15-1/2-oz can garbanzo beans, drained
6 oz sliced, drained black olives
1-1/2cup chopped onion
1 cup shredded carrots
1 cup shredded or sliced green peppers
2 cups chopped tomatoes
1 cup sliced radishes
1 16-oz jar Marie’s Creamy Italian Salad Dressing
1 T basil, chopped
1 T oregano, chopped
1 T garlic powder
2 T fresh parsley, chopped
1/2 tsp chili peppers, dried
1/3 cup shredded parmesan cheese

Cook and drain pasta, and cool it under cold water. Mix with the rest of the ingredients.
