I need to use them up. Was thinking of making jam, but I'm not sure. Besides eating them whole (my favorite way) or popping them into a green or fruit salad, any must-try favorites?

Thanks.

Rec: Spinach Salad with Strawberries

Spinach Salad with Strawberries

spinach leaves
sliced strawberries or nectarines, peaches, mandarin oranges (whatever fruit is in season)
sliced almonds, lightly toasted
julienned jicama or sliced water chestnuts (for crunch)
a little bit of watercress, if desired

Toss salad lightly with enough Honey Dressing to moisten but don’t oversaturate.

Honey Dressing:

2 tbsp parsley leaves (or cilantro)
1 small onion (about 1 oz.), peeled (Maui or other sweet onion is excellent if available)
1/2 tbsp dry mustard
1/2 tsp sweet Hungarian paprika
3/4 tsp salt
1/2 tsp celery seed
3 tbsp honey
3 tbsp cider vinegar
1 tbsp lemon juice
1/3 cup vegetable oil (Canola is good)

In food processor using metal blade, mince parsley by turning machine on and off a few times. With machine running, mince onion by dropping it through feed tube. Add remaining ingredients and process about 5 seconds. Yield: about 3/4 cup
