home made vinegar. I just got the mother out of the bottle and plopped her into some cab I had forgotten to cork. I can't remember how long you let it go for? Cathy Z has made it and she was one of the responders. so, anyone know how long it takes?

Hi Randi- how long did you let the mother sit before using it and what did you make it out of?

If your mother was fully developed, making the cab into vinegar should take about 60 days or so in a cool place. How it will turn out is dependent on how much mother vs how much cab you used too- if it is thin or weak, add some vinegar. If it is too strong, thin with a little water.

You can actually use JUST wine to make vinegar too- you can pour wine into a crock or glass container, put cheesecloth over the top, store at about 60 degrees and in about a month it should be usable.

 
the mother is a gelanteous disk and I just put her into a jar of cabernet. it's

cool here so that won't be a problem. it's about a half, maybe a bit more, of a bottle of wine. the mother isn't huge but a very firm disk.

should I just let it go for a week or two before deciding if I need to add vinegar?

I would use cheesecloth and check it after a week. If the disk dissolves then check

again after about two weeks- that is my guess. Half a bottle of wine may not be enough for the amount of mother you used- I have always used the equivalent of about two bottles for a small bit of mother but you should be able to tell in a couple weeks. You want air to get into the vinegar so I think cheesecloth might work better than just leaving the jar lid loose, Try for about 60 degrees if you can.

Where did you get your mother Randi? I have wanted to make

vinegar using a mother but I don't know where to find one. I have made vinegar using vinegar and wine and that turned out so good. I would like to try this method too.

she grew herself in a bottle of champagne vinegar I have. now, that bottle of vinegar has to be

at least 4 years old. it think it starts with a film on top of the vinegar, which I've seen before. but, with everything that happened, I probably hadn't used this vinegar at all in a couple of years.

And then Randi's comment about her mother growing in a champagne bottle. I have the most outrageous image in my head--a cross between the Bible, the Food Network, the Twilight Zone, and the X Files.

 
I've met some mothers that have been much happier people if they started out in champaigne bottles..
