Tiny taqueria size corn tortillas, pineapple & potato salad. You could grab the meat with the tortilla, slide it off the bone & top with salsa. Yum!

 
Why laughing at the potato salad?

Ensalada de papas? Mexicans eat ensalada de papas...

Is there something particularly regional about potatoes with mayonaise that I'm missing?

 
One of the best tostada experiences I have had--at a potluck someone brought a vat of potato salad

with chicken included. Probably meat fron a rotisserie bird from the supermarket, but the potato salad was homemade and included a chiffonade of iceberg lettuce. Served it on tortilla rounds (the pre-fried packaged kind) with a bottle of Tampico hot sauce on the side. I had five tostadas and I wouldn't have changed a thing.

 
Potato salad is so versatile and inexpensive

I'm pretty sure almost every country eats some version of it

In South America they add peas, carrots, and beets and call it ensalada rusa - even in Japan, I've had potato salad as a side dish.

That tostada sounds really nice!

 
In the Czech Republic, potato salad is one of the stars of Christmas dinner.

Every family's version varies--ours includes shredded carrots, chopped ham, chopped pickles, and peas. (It's a lot better than it sounds, I swear.)

I could live on potato salad.
