Rec: Spiced Pear Martini

Also serving these since I've got a batch of that fabulous French Spiced Pear Compote from Lenôtre on hand.

I'm pretty sure I've posted this before, but here it is again since it's so simple:

Lenôtre Spiced Pear Compote

6 Pears, peel, core, and slice into 6-8 wedges
1 cup honey
1 star anise
10 black peppercorns
2 bay leaves
4 cloves
4 cups water

Bring all of the ingredients except the pears to a simmer. Let simmer for 10 minutes. Add the pears, simmer for 5 minutes, remove from heat, cover, and cool to room temp. Refrigerate over night. Amazing. Use the leftover syrup in pear martinis or with seltzer to make a pear soda.

Now for the Spiced Pear Martini:

2 oz. frozen vodka
1 oz. spiced pear honey syrup
Stir with ice, strain into chilled martini glass.
Garnish with one of the spiced pear slivers.

This compote sounds sooooo good! Any type of pear?

It reminds me of Mark's Pickled Pineapple.

Gotta go look for some pears smileys/smile.gif

I use all types. Use slightly underripe so they don't fall apart...

Good use for the rocks they sale in the grocery stores.

It is very unusual and very good. I make this several time a year.
