Party Sunday - need a 'New' drop dead finger food to take....

This is one of those times when I truly have to be a show off and have a show stopper finger food. I've taken the buffalo chicken dip and they love that. I've done salmon rillettes, la brea tar pit wings, brie kisses, K Pinky's pink peppercorn feta, black pepper almonds...

So I am looking for my next 'blow them away' item and can't decide what to do - your thoughts or newest 'discoveries? Has to be something I can take and I will have a place to reheat but can't really cook once there.

 
How about Peppered Tuna Skewers with Wasabi Mayonnaise (pan seared) in T & T?

I've made them three times and think they're awesome. EPI reviewers are happy with a 100% would make again rating.

You could nuke them slightly in the microwave and then skewer, or skewer and nuke at the party. Geez, I don't know if you can put toothpicks in the microwave. I've even enjoyed some cold leftovers. In fact I don't think they have to be served right from the pan, room temperature might be the way to go.

Stuffed Mussels

Stuffed Mussels

adapted from stuffed clam recipe in The Nero Wolfe Cookbook

INGREDIENTS:

mussels
1 c fresh bread crumbs
3 tbs minced shallots
1 tbs minced chives
1 tsp fresh chervil
1 tsp fresh oregano
1 tsp fresh basil
2 tsp dry sherry
4 tbs minced mushrooms
2 tbs butter
mussel broth
4 slices bacon


PREPARATION:

Preheat oven to 375 F. Scrub mussels. Steam. Remove and save liquid. Remove and mince meat. Save 1/2 of shells. Put minced mussels in bowl with bread crumbs, herbs and sherry. Sauté mushrooms in 1 tbs butter for 2 minutes and add to mussels. Add enough broth to moisten. Butter shells and fill with mussel mixture. Top each with a small piece of bacon and bake until bacon is crisp.

 
Pancetta Crisps

Pancetta Crisps with Goat Cheese and Pear

16 thin slices PANCETTA (ideally 1/8 inch thick
16 tsp SOFT FRESH GOAT CHEESE (from 5-ounce log)
2 very ripe SMALL PEARS, quartered, cored, cut into 1⁄4-inch-thick slices
FRESH THYME LEAVES

Preheat oven to 450° F. Place pancetta slices in a single layer on large rimmed baking sheet. Sprinkle with pepper. Bake until golden, (about 7-8 minutes). Using spatula, slide pancetta crisps onto platter. Top each with 1 teaspoon goat cheese and 1 pear slice. Sprinkle with thyme and serve.

Note:

Cook pancetta in microwave oven. 9 slices of pancetta takes about 5 - 6 minutes. Check after 4 minutes.

Mix thyme into goat cheese along with a little whipped cream cheese. Better flavor, easier to do.

Heart of Palm Prosciutto Wraps

Heart of Palm Prosciutto Wraps

Ingredients

4 slices Prosciutto ham,* very thinly sliced or use regular rectangularly shaped cooked ham
1/3 cup Herb Cream Cheese (recipe attached)
1 bunch fresh basil leaves, washed and drained
4 whole stems of heart of palm,** well drained

Garnish

1/3 cup macadamia nuts, coarsely chopped (I used hazelnuts.)
cluster of fresh basil leaves

(Makes 16 to 20 pieces)

Lay out slices of ham (side by side and well separated) on a clean surface with short edges in a horizontal position. Paint each strip entirely and evenly with about 1 tablespoon of Herb Cream Cheese.

Place fresh basil leaves in a single layer over cream cheese surface, covering about 50 % of lower part of each Prosciutto ham strip; press lightly to secure leaves in position at lower edge. Arrange one entire “log-like” stem of heart of palm horizontally across basil leaf and cream cheese garnished strip of prosciutto; trim off stem of heart of palm that exceeds width of prosciutto strip.

Tightly roll ham around heart of palm stem. Arrange roll with seam side down; add a line of Herb Cream Cheese (about 2 teaspoons) across top of roll; press chopped macadamia nuts into cream cheese garnish. Repeat procedure to form 4 long Heart of Palm Prosciutto Wraps/Rolls.

If not serving immediately, store in a wax paper lined plastic container, covering surfaces carefully but closely with plastic wrap; close container with an airtight lid. Refrigerate.

Just before serving, remove rolls from container. With a sharp knife cut into 1 cm or 1⁄2 inch slices. (Avoid being too generous as this hors d’oeuvre
should be “one-bite” in size.) Artistically arrange slices in a standing position (macadamia nuts up) on a doilie lined tray.
* Proscuitto Ham is generally rectangular in shape (about 20 cm x 8 cm or 8 inches x 3 inches).
** Heart of Palm comes from the small cabbage palm. The hearts are peeled, then processed and placed into cans with a light salt brine. Heart of
Palm comes principally from Central and South America.
*** If stored properly rolls/wraps may be prepared
to this point hours before serving.

Herb Cream Cheese ©

Ingredients

1 cup cream cheese*, regular or low-calorie
2 teaspoons mayonnaise
1 teaspoon dill weed
1⁄2 to 3/4 teaspoon** fresh garlic, crushed

(Makes 1 cup)

Using a fork and working on a flat plate, combine ingredients thoroughly to form a smooth mixture.

Store refrigerated or frozen in an airtight plastic container.

* Use the wrapped block type of cream cheese, not the “spreadable” type.
** According to taste.

Sylvia's note: I used the spreadable cream cheese without the mayo and it worked well.

These look great but the mussels didn't look as good as the clams the other day - think I can swap?

Since you've made these, just wondered if you thought this would work with clams - they've been having some nice clams and oysters the last week or two but not mussels.

 
These really are great. I did them for a Christmas open house and

people hung out in the kitchen to get them before they went out to the buffet table. I used fresh ahi sashmi grade tuna.

I third that!! Yesterday was a continuation of Murphy's law in my kitchen.... It started last week..

when I was cooking for about 30 for my s-i-l's birthday on SAt. and my grandson's on Sund.
With 4 cakes ready to go in the oven, the oven quit on me!!
Things went from bad to worse but I did manage to get both the party and the giant dinosaur cake out.
This week I was suddenly in desperate need of some more things for a first course. We were only 10 but I had miscalculated.
There was Peg's site! to the rescue.
I made some crostini's in a flash and all went
well.

I don't think I have made an elegant dinner without using Peg's site.

We love this.

Just do a seach of Sylvia, and you will find great recipes. I know, I did it. Love the smoked oysters.

 
Perhaps you could use brie or other semi-ripened cheese mixed with cream cheese and thyme.

Blue cheese mixed with cream cheese would also be good.
