Made this last night for dinner and it tasted wonderful!
As some of you know my Better Half is an avid fly fisher so I'm constantly looking for good recipes with salmon. (Well, some years he doesn't catch that much and then we eat chicken like other people! smileys/wink.gif
For four people you need:
1 pound spaghetti
1 1/2 pound boneless salmon filets cut into one inch cubes (-or take a decent size salmon from the freezer, de-skin and de-bone it, make a mess of the kitchen, notice how those silvery fish shells get stuck to the counter top like they had glue on them and you are trippling over the dog who is waiting for something to fall onto the floor...you'll probably end up with just under a pound of salmon if you have my luck but as long as nobody gets hurt.....know what I mean? smileys/wink.gif
1 yellow onion, finely chopped
1/2 cucumber, cut lengthwise, scrape out seeds in the middle with a teaspoon and slice it.
1 1/2 - 2 cups heavy cream
3-4 T frshly chopped dill
a small pinch of cayenne (be aware, this stuff is HOT. Use with care. You don't want to kill the delicate salmon taste)
salt and pepper to taste
Heat some oil (or butter) in a large skillet. Add onion, and saute for a few minutes. Add heavy cream and salmon, and let it heat up. Before it starts to boil, turn down heat. A bubbling boil will tear your salmon cubes into a mush.
Then add cucumbers, dill, cayenne and salt and pepper. Let the skillet stay on a medium hot plate until salmon is done. This takes about five minutes.
Cook pasta according to package.
Serve sauce over pasta in a large bowl.
(I often decorate with a few extra sprigs of dill.)
I love parmesan on top of this dish. My Better Half preferes it without. I know there is a "rule" out there saying that you shouldn't sprinkle parmesan cheese on top of a cream sauce, but if you love cheese as much as I do, you know that parmesan can be used on a lot of things that is not necessary approved by the establishment... smileys/wink.gif
