I ended up using double the chili powder - I think I need some fresh! smileys/smile.gif In addition, I also used a scant tbs each of ancho chili powder and ground New Mexico chili.

I used half yellow and half red onion, cuz that's what I had.

I also added 1 can each of drained kidney, pinto, and black beans - we love beans.....

I served it with the cornbread recipe I posted above in Meryl's thread - a big hit!

It's a tweakable recipe for sure. I made it last week using some

chili beans in an adobo sauce. Tasty stuff. So glad you liked it too Lisa.

I have to try that cornbread recipe....I prefer sweeter cornbreads myself, even though a southern friend laughs at me says "that's not corn bread, that's corn cake"...LOL. Whutever!!!...that's what my tastebuds like...the sweet stuff. ;o)

Oh, I'll definitely try the chili beans in adobo next time, where did you find them. I haven't noticed them in my market, but then again, I haven't been looking!

My shopping trips lately have been in the company of a two year old who loves to push those "Customer In Training" minicarts at 50 miles per hour through the store, so I haven't gotten a chance to look at anything for a while. smileys/smile.gif

 
Ran to the pantry to check the other can, it's not adobo like I thought, it's

S&W Chili Beans, pinto beans and chipotle peppers in a zesty Sante Fe Sauce. Can't for the life of me remember why I bought these 2 cans of chili beans. I'm sure it was for some recipe that sounded great and now it's buried in one of the to-be-tried recipe piles to be uncovered at a future date when the beans are no longer in my cupboard. What the heck! Anyway, I thought why not use 'em in the chili, how bad could it be. The chili was a bit spicier than usual, probably due to the chipotle flavored chili beans, but pairing the chili with beer helped squelch the heat. ;o)

 
LOL - you sounds just like me! What did I buy this for? I just went through

a huge stack of print outs to cull them down to favs. I do need to get them into a binder, but for some reason I haven't gotten to it yet.

DH actually made me a nice one for Christmas quite a few years ago, but I haven't been diligent about keeping it updated. I imagine if I did, I would need multiple binders.

Oh yea, beer is a must for chili! In a nice frosty mug.....

 
What is the fat content of the ground beef called for? I don't see directions to drain the fat.

Just caught Nigella this weekend and she made a chili without draining the fat. In fact, I believe she added stewed tomatoes and tomato sauce to the uncooked ground beef?
