Pat - made your Pork Medallions in Olive Caper Sauce - muy bueno!!

Does anyone else have a problem finding "smaller" 2.5 lb chickens these days? Seems all I find are

4lbs and up... even the fryers are big!

Also a question about the pilaf in the Chicken Marabella recipe. Does the pilaf bake covered or uncovered?

You know, I haven't seen that size for years. I can remember when 3.5 lbs was a

big fryer. I wonder if they aren't marketed at that size any more? But come to think of it, aren't some of the rotisserie-roasted chickens the smaller size? Even the Bell and Evans chickens at Whole foods are larger than that and they aren't full of the fat that adds to the weight of the supermarket brands.

 
my thought is that all the small chickens are snarfled up by...

the fast food chains who sell chicken by the piece not the weight.

 
Hallie I cover the pilaf. And sometimes I just buy a bigger chicken and cut it in half saving

one half for another time.
