Traca: Here's my spice cookie recipe...
I got this recipe from a former food editor from one of the Vancouver, BC newspapers. She's now cooking and loving life on an island off the coast. They run scuba dive trips and these cookies were wonderful after coming out of the cold Pacific waters! The area there is some of the best cold water diving in the world, so their spot is lovingly called "God's Pocket". Here's the recipe...
God's Pocket Cookies
3/4 cup butter or margarine
1 cup sugar
1 egg
1/4 cup molasses
1 1/2 cups flour
2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
3/4 tsp cloves
3/4 tsp ground ginger (or more)
2 cups oatmeal (regular or quick)
Beat egg and sugar together until creamy. Beat in molasses. Mix dry ingredients. Combine with wet until blended. Stir in oats. Drop by spoonfuls on ungreased cookie sheet and flatten. Bake at 350 for about 8 minutes. Remove to cool on wire racks.
Traca's note: One thing about the Spice Cookies....
I made them again just after I sent out the recipe. When it says 8 minutes, that's true. Keep a good eye on them 'cause they burn easily after that. I took them out when they were a little soft (seemed not quite done...), but let them cool about 5 minutes on the hot cookie sheet, and they were perfectly chewy. Some I didn't watch so well and maybe they were cooking about 10 minutes and they were crispy later, which was fine. The batch that cooked 11-12 minutes were not worth serving... It sounds pretty detailed but besides the amazing flavor, I like the recipe because 1) I usually have ALL the ingredients in the house and 2) the quick cooking time. I like doing drop cookies but sometimes the cooking process seem like for-ever.
