Ah. This was my first “dipped taco” and I have to say it’s delicious, but not perfect. For me, at least. I loved the taste but my mouth wanted crunchy and this recipe ends up soft, not crunchy at all, even thought the corn tortilla is grilled.

I cheated on the dipping sauce, simmering Mateo’s salsa, some canned tomatoes, a squirt of tomato paste, 1/4 tsp of guarjillo chili powder and some fresh lime. Quick and dirty and very tasty.
The other issue was “eatability” otherwise known as “getting this into my mouth without the avocado slices or shrimp squirting out.”
Cause they did.
On the second attempt, I simply smashed the avocado onto the tortilla and sliced the shrimp horizontally. Made it much easier to eat, if still not meeting the Crunch Factor my mouth craved.
I’ll have to research if you can fry a dipped corn tortilla or if it’s too wet to fry.
