I lost this post the first time---I have had to log in twice today, which is very odd. I usually don't have to log in at all.
very loosely based on several muffin recipes and what I had on hand, so I'm claiming it as my own. they were delightful this morning for breakfast(and snack last night)
Angie's Pear and Raisin Bran Muffins
3/4 cup buttermilk
3/4 cup warm water
1/4 cup molasses
1/2 cup Splenda
1 egg, slightly beaten
1/4 cup vegetable oil
1 tsp vanilla
2 cups Bran Flakes Cereal(or 1 1/2 cups All Bran or Bran Buds)
Combine the above ingredients in a large bowl and let sit for about 10 minutes. while waiting, line muffin tins with paper liners and spray lightly with cooking spray(makes about 18 muffins). set oven to 400.
stir together 1 2/3 cups flour, 2 tsp baking powder and 1/2 tsp salt and then add to wet ingredients until just blended. fold in 1/3 cup raisins that have been plumped(no need to plump if they are fresh and soft) and 1 pear, cored and diced. scoop into muffin tins, almost to the top.
Bake at 400 for about 20 minutes.
If you like candied ginger this would be a nice addition. Next time I'll add a bit of cinnamon.
