Peeling roasted peppers

I see so many recipes that say to roast (or grill or broil) the peppers and then put them in a plastic or paper bag until they've cooled a bit, then peel them. But I used a recipe that just said roast them, put them in a bowl, and when they're cool enough to handle, peel them -- and I couldn't imagine they'd peel any easier. (I've done this several times now with similar success.) If it's so easy WITHOUT the bag, why do so many recipes tell you to put the peppers in a bag?

 
i beleive that the theory of the bag is...

that they will continue to steam and loosen any skin that did not come loose during the roasting...
