Peter Reinhart on The Art of Baking Bread

This guy has piqued my curiosity about this whole wheat bread. Checking with my library to see if

they have his book.

 
Gail, Peter is the bread God. His "Bread Baker's Apprentice" is the stuff of legends and totally

worth purchasing. He manages to pack in so much good information (why things happen) without being dry. And the recipes are the kind that make me stand back and shout, "Damn! *I* made that?" I've impressed myself more than once with Peter's recipes.
