I have gotten good enough at doing this that I end up with very nice smoked sliced pork, but keep running out of time on taking it all the way to “pullable.” Still need some practice. My ribs are coming out pretty well too.

 
Ribs...yes, my favourite. They take a long time but sure are worth it. We had a special salt that we made up; it seemed to work for just about everything.
