Been meaning to use it, very pretty, with pinkish colored stems, and each leaf is only about the half the length of my hand. The following was a little "stemmy" because I was too lazy to cut the stems off, but they chewed nicely enough:
Also, I suppose you could chop the kale before cooking, but I left it whole and cut up the melange after cooking.
Olive oil
a Large handful of baby kale
hot water
1-1/2 to 2 oz jack cheese cut into small cubes
fresh ground pepper
2 eggs, beaten with a little water(mine are laid by my hens and delicious!)
Heat a medium size cast Iron frying pan over medium high heat till it just starts to smoke a little. Pour in a little olive oil to grease the pan, throw the kale in and quickly pour over a couple of tablespoons of water (the water should boil very growlingly) and briefly stir-fry the kale till it turns bright green and wilts.
Add the cheese and then quickly pour over the eggs, grind over some fresh black pepper and then stir it all into a tasty mess until the eggs are set to your liking. Very good, and filling.
