This one is from one of Prepared Pantry's mailings. It is delicious.

Today I made it for a 2nd time and it came out as a great dessert idea!

I had cold and thickened coconut milk today, a slightly bigger frozen banana (I had frozen bananas as opposed frozen yogurt)...I also added a bit of vanilla..This time it tasted a little strawberry'ish as opposed to a definite coconut taste the first time.

Today it was so thick we ate it with a spoon just like eating ice cream. What a great idea for an anytime dessert.

I never had to add ice or liquid because of the vitamix.

Pink Strawberry Pajamas Smoothie

2 large bananas

10 large strawberries, frozen

1 cup coconut milk

2 large scoops vanilla frozen yogurt

Put the ingredients in a blender and blend until smooth. Add milk or ice for the right consistency, if required.

3/4 cup unsweetened apple juice
1/4 cup soy milk
or light cream
1 teaspoon sugar
or pure maple syrup
1/4 teaspoon pure vanilla extract
1 pinch ground cinnamon
1 pinch ground nutmeg

This creamy, lip-smacking treat was developed as a drink special. Its
sweet, apple ‘n’ spice taste will surprise you.

Serves 1
Yields about 1 cup
Total time: 2 minutes

Add the ingredients to a large glass filled with ice and stir until well
mixed.

I made this after dinner yesterday, it was truly an after-dinner treat.

I used maple syrup rather than sugar and milk. Next time I may try 1/2 and 1/2. I may even add a date next time, just see if it riches it up or changes the flavor.

This really does taste like an apple pie,
