Pineapple sauce..use in salads, on sandwiches// Zucchini Hummus

HI all,

It's been a while since I was here, but I finished my master's degree and grad 2nd in the class. I'm also working 50-65 hours a week.

I was looking for a recipe to add some zing to my salads and sandwiches, which lately have been more veg..I found this and changed it .. but it is delish..

Hope you enjoy as much as I:

Pineapple sauce

-- 1 20 oz can crushed pineapple..in own juice

--1/4 tsp crushed red chilies

--1/2 tsp dried oregano, less if fresh

4 Tbls plus 1 Tsp worsheshire sauce

2 Tbls lime juice

blend pineapple in blender( I do about 3/4) add the rest as is..

cook in pan till just bubbles

add: 1 Tblsp at a time after mixing:

2 tblsp cornstarch and 2 tblsp cold water..

refrig and use as you like..

I often add this to my salads after I make a dressing of balsalmic vinegar and 1 orange, blended well.

To those who do not like hummus.. I just don't like chick peas.. a friend gave me this recipe and I love it.. often make and take w/ vegs and crackers

Zucchini Hummus

-- 1 zucchini peeled and grated

1/2 cup lemon juice

1/2 cup tahini

1 dash salt and pepper

1/2 tsp cumin

1 clove garlic

1/2 cup parsley (if you like )

1 jalepeno, chopped ( optional)

mix, refrig to let flavors blend

top with paprika to garnish,, serve w/ vegs, crackers,,etc

mmmm... they both sound good! I have a favorite peanut butter dip I make ...

and it's easy to take with fruit slices or veggies to dip in it.

Your pineapple sauce sounds like it would be good over grilled pork or fish too.

I've never added the coconut as it is really good as is:

Chunky Peanut Butter Spread

This is great spread on crackers, toast, or as a dip for fruit

1 4-oz. package whipped cream cheese
1/2 cup chunky peanut butter
2 tbl. milk
1 tbl. honey
1/2 cup finely snipped raisins or dried apricots
Flaked coconut, optional

In small mixing bowl, stir together cream cheese and peanut butter. Add milk, 1 tablespoon at a time until blended. Stir in honey, raisins or apricots. Using a rubber spatula, scrape into a small serving bowl. Sprinkle with a little coconut if desired. Cover and refrigerate any leftovers.

 
sounds great, BUT

we have 2 people in our office and 1 at church who are soooo allergic to PB that even the smell on your breath sends them into anaphylxis, or if someone leaves a wrapper, in the trash can, in the building( not even on the same floor) I don't even buy PB any more. too risky. I"ll try it with almond butter.
Yes, busy.. grateful for the job at this point, with so many out of work.
