Please help with recipe for delicious coconut macaroon cookies in a meringue shell

The center appeared to be a true chewy, sweetened condensed milk, sweetened flaked coconut macaroon covered in a thickish meringue (~1/4") that could be peeled off the chewy center - a 3-to-5-bites round cookie. Cookies were labeled as gluten free and dairy free. They weren't particularly brown like a traditional coconut macaroon. I'm having trouble finding a recipe other than for a coconut meringue cookie. Could this be some type of Italian Meringue Forgotten? Colleen

Yes, they do!

Was hoping for been-there-done-that experiences but I know that I've never seen anything like these before so maybe no one else has!
I found your suggested recipe and 2 others I'm going to work from b4 next Friday's holiday party. I'll post what I end up doing.
