? Please: what should I sub for the pink peppercorns in kpinky's feta cheese appetizer?

Barbara, it's the pink peppercorns that really makes this appetizer sing.

Try a small bit of cheese with the herbs, olive oil and a "little" freshly grated black pepper. However, it just won't be the same.

Are you having difficulty finding pink peppercorns? I buy them at a bulk food store. You can also order them on line.

Barbara, I served this for Easter and I would agree with Sylvia. There just isn't a good

substitute in this case. It's not just the flavor, but the color and texture that are important.

I think there might be a suitable sub

but it's more elusive than the pink peppercorns, LOL. Dried Sumac berries. Very similar with the tangy crispy crunch and color. Penzey's sells an herbal mix called Zatar with sumac and sesame seeds that would be interesting.

But I agree, the pink peppercorns are absolutley what makes this dish.

Okay--thank you for the info. I will order some pink peppercorns from Penzys today..

and hope they're here by the weekend. If not, I'll just have to make it anyway because I am dying to taste it!

Thank you all!

kpinky has been MIA for quite awhile. I hope she reads and sees how popular this dish is.
