Popsicles & Sorbet and recipe for Ruby Lemon Sorbet

Tess has me inspired to make popsicles. I didn't get all the ingredients yet for the below, but I thought I could freeze it in ice pop molds rather than the ice cream freezer (no room in the freezer for the bowl right now anyway). Today I rough-pureed a pint of strawberries & added about a half cup of coconut milk & a few tablespoons of sugar and put in the freezer. Here's the next one (from a Prevention magazine article this month).

1 cup Pomegranate Syrup (below)

1 cup water

1 cup fresh lemon juice

2 tablepoons of grated lemon rind

1/4 cup agave nectar.

Mix & freeze in ice cream freezer by manufacturer's directions.

Pomegranate Syrup

2 cups pomegranate juice

1/2 cup agave nectar

Simmer gently until reduced by approximately half. Cool.
