J joe Well-known member Jan 22, 2012 #4 You could probably fry it up and treat it like carnitas. Also, Paula Wolfert gives a recipe in "The Cooking of Southwest France," and suggests browning it and then serving cold in various salad preparations, often with pickled veggies.
