REC Great Meatballs from Michael Chiarello...if it's not too late to give you an idea...

I've made these meatballs several times, with great results. They are unique because they are NOT FRIED, but STEAMED. They turn out moist and tender, great flavor, and there's no grease mess to clean up. Didn't like the sauce so much, but I'll send another link to a very good tomato sauce from Giada De Laurentiis' Penne with Vodka Sauce recipe. Just use her Simple Tomato Sauce part of it. It's a winner, too.
