Probably everybody but me knew about these rolling pin covers

A friend wanted me to bake her a pie when I visited and she said “see, I even got you one of these cover things my mom used to use”. I had never seen this before, but it changed my rolling pin life! You put one of these covers on, flour your rolling pin and voilà! It works so much better to distribute the flour. I have a pastry cloth and rolling pin cover set that I haven't used in eons. I

have success rolling out pie crust between sheets of waxed paper.

My mother never used anything but her rolling pin which she would flour before rolling out her lard pie crusts! I could never master Mom's technique, but waxed paper works fine for me. Mother also ALWAYS would work the lard into her flour mixture using her bare fingers! I could never make that come out right either so I initially used a pastry cutter like these at

but some years ago--after taking a pastry class--I began making pie dough using my Cuisinart food processor.
