My short list for this week.

Samin's focaccia (thanks Judy!)

Scallion pancakes: serious eats

scratch made tortillas

Pesto using a mortar and pestle instead of a food processor

Soy eggs

Already made Cooks country pasta e fagioli--delish

Cathy Z's quick cheese bread--excellent--thank you

This will keep me distracted from the cleaning and chores I should be getting around to. I need to get walking!

Furlough week 2 coming up--any suggestions for a project cook?

I too made Soy eggs - did you use the recipe from ATK./CI?

I can't remember which magazine it was in. I liked the taste but it was a bit salty, I need to use low salt soy next time.

 
Have fun with the bread! I've made it twice, so far.

My newest toy is a pasta extruder attachment for my KA mixer.

I haven't been able to find semolina flour, so I will try a recipe or two that I found that uses all-purpose flour.

And I will keep up the search for the semolina.

 
Thanks Paul--these look great. No if ony DH would stop eating the eggs for breakfast..

Eggs are getting scarce and expensive, hopefully I can score more to try these.

 
Scratch made pasta sounds like a nice project. Made the foccacia

Rested overnight last night and baked this AM.
A few learnings--overall fantastic flavor and beautiful.

Stuck a bit to the bottom of the pan, despite the amount of oil.
I should have turned the pan, as one side underneath was much more well done than the other, which may have contributed to the sticking on the less well done side.
(learned the oven here is a crappy as I thought it was--doesn't maintain even temp well, 2 repair man visits later...)

Highly recommend and definitely would make it again,

sorry to hear that about eggs

Eggs were sold out at a couple of stores a few weeks ago but they have been more available now here. I don't know if costco is an option for you but we have a full house and a garage fridge so we bought a box of 15 doz medium eggs from the Costco business center for $14. Everywhere including Costco, Walmart and Amazon have been jacking up prices but that was one item we got that I felt was a bargain.

The 15 doz large eggs were twice the price at $28.

 
About the focaccia sticking to the pan...

I have learned that spraying the pan, even non-stick ones, first with no stick coating before putting the oil on the pan helps avoid sticking.

 
Yes - spray for the pan and then a little olive oil for taste and crispyness

One of the recipes I tried did that and it worked very well

 
The first batch of rigatoni, made in the pasta press

was a great success!

I did manage to find semolina online and I have 10# coming soon! Then I will try some of the other shapes. I think the spaghetti and bucatini will work better with a stronger dough.
