PSA: Costco is discontinuing the 25lb bag of Bakers Craft flour, BUT

I saw today a 2pk of 10lbs each of it. It's still organic, but labeled Organic AP flour (then Baker's Craft is in small letters) from Central Mills. For about the same price I paid for the 25lb bag two weeks ago (a buck of so less) - $13 and change. However, 10 lb bags will sure be easier to handle and it's great news that it seems to not be going away completely as I feared.

 
I've been buying this too. Making bread and pizza. Major difference

in taste/quality vs regular Gold Medal all purpose flour.

 
Organic Bakers Craft is a blend of hard red wheat, malted with 11.5% protein; KA AP is 11.7% protein

Both are unbleached, but the Baker's Craft is also organic. Which means no GMOs. I find it very comparable to KA. This flour is use by both Tartine and Acme bakeries to produce their bread. I love it and it's a steal at that price compared to KA.

 
I wish I knew why those numbers were significant.

I ran out of the organic flour and made a second batch, same day using Gold Medal and the quality of the bread was dramatically different. I would never bother making bread again with the GM flour. Not worth the effort. The other flour however is awesome. Everyone loves it and I've had fun learning how to make bread and doing different things with it like braiding...
