Pumpkin Pie Butter Tarts - making these for our Thanksgiving Farmer' Market

Wow...do those look nice. Pumpkin is the one item that I prefer canned and non-organic.

The canned organic I bought the past two years was HORRIBLE. And the work invovled to make my own puree with a fresh sugar pumpkin was ridiculous.

Libby's canned pumpkin was good enough for Mom. It's good enough for me.

 
I so agree. Years ago when I joined Weight Watchers, they told us about a desert

made with canned pumpkin, lots of warm spices added, a sweetener, all mixed up and topped with Cool Whip. It was delicious.
