Pumpkin Zucchini Bread

So my wife wakes me up this morning and says, "Can you do me a favor." (note the punctuation here which is intentional - period, not question mark)

We got gifted some zucchini and she wanted Zucchini bread. So I agreed. Then I remembered I had extra canned pumpkin from Trader Joe's so I looked up Pumpkin Zucchini bread to see if that was a thing. No recipes on the eat.at Recipe Swap so google it and come up with the recipe at tasteofhome.com. I liked it because I seem to remember the site being recommended on here before and the recipe looked pretty straight forward and I had the ingredients except cloves but figured I'd get crazy and switch All Spice for cloves. Turns out I didn't have the walnuts or enough butter so ended up going to the store anyway. I doubled this recipe.

I tried this today. Great with two tweaks. I cut the sugar to 1.5 cups and wrung out

the zuchini in a tea towel. I also mixed some of the flour mixture with the zucchini so it wouldn't sink to the bottom of the loaf. I would love it with walnuts but didn't included them as the loaves were a gift and who knows who is allergic to nuts.

 
I sliced the zucchini and put them between paper towels

about 2 hours before I did anything else. Fortunately the ones we got were really dense and meaty without a lot of seed or mush. Your method is better because the thinner slices made it harder to shred.

I had wanted to sub chestnuts for the walnuts but the store that I went to didn't have chestnuts. But I want to try that.
