Put together some delicious Pho last night. It's actually quite simple to pull off.

I used a combo of Swanson's canned low salt chicken broth and Pacific brand beef broth (the only brand I'll use since it actually tastes like some beef was in the room when they made it. It is the only one CI recommends as well) in a 5 to 1 ratio (chicken to beef).

We had gone to our favorite asian market over the weekend, and I found pre-cut eye-of-round in wafer-thin slices. That made it so easy! I could poach the meat in the hot broth right before serving.
