I'd only recommend this if you have an oven that can maintain a very low oven temp. Ideally 125 F or less. And if you use the convection the leaves will likely end up flying around in your oven when they get really dry.

Also you don't necessarily have to crumble. If you leave them whole they will likely crumble anyway but bigger is better. You can always make the bigger, smaller but you can't make the smaller, bigger...
