Quail Eggs Any ideas?

I finally made it to the Chinese Supermarket and I was blown away. Can't believe it took me so long and it's only a couple miles from my house. Amazing selection of fresh and frozen seafoods, baby lobsters, whole monkfish, jumbo prawns, WITH heads ($5.65/lb!), I am in heaven! And great prices too! Much better than the market I normally go to. Finally found cheap rice vinegar, a buck and some change for a quart, 2 lbs. of fresh Shiitakes for $3. Definitely will be doing a lot of shopping here.

So I was gathering the ingredients to do Hot Pot at tonight's birthday party, and right there beside the baby bok choy: tiny packages of 10 quail eggs for $1.50. Of course I had to buy some.

I thought we could break them into our soup or some such, but just thought I'd fly this up the flag pole: Any fun Chinese recipes for quail eggs out there?

 
This sounded kinda good: Not tried--Sweet and Sour Quail eggs

Doncha love the oriental market? Stuff is sooo cheap!

I googled "quail eggs chinese recipe" and this is what I came up with(along with others):

Sweet and Sour Quail Eggs with Vegetables

Serves 4

Ingredients:

* 20 quail eggs, hard boiled and shelled
* 2 tbsp flour
* 1 carrot, boiled and cut into bite-size pieces
* 1 small bamboo shoot, boiled and cut into bite-size pieces
* 1 small onion, boiled and cut into bite size pieces
* 1 green pepper
* 2 medium dried Chinese mushrooms, soaked in water and quartered (reserve mushroom water)
* Oil for deep-frying

Sauce:

* 3 tbsp ketchup
* 2 tbsp vinegar
* 2 tbsp sugar
* 2 tsp cornstarch
* ½ cup mushroom water
* ¼ tsp salt



Directions:

1. Coat eggs with flour and deep-fry in heated oil. Dropping them in the oil one by one, till the color changes to a light brown. Deep-fry the vegetables in the same manner for 2 minutes. Drain on paper towels.
2. Combine ingredients for Sauce.
3. Heat 4 tbsp oil. Add and heat Sauce until thick then add eggs and vegetables. Cook until heated through.

 
REC: Truffled Quail Eggs

I had posted this one a while back, it was really good and easy!

Truffled Quail Eggs

24 quail eggs

1 ½ -2 tbsp prepared mayonnaise, more as needed

1 tbsp black truffle butter, such as Urbani or D’Atragnan, softened

salt and freshly ground pepper to taste

carefully place quail eggs in to saucepan of cold water.
Bring to a boil, add a pinch of salt, and simmer for fice minutes.
Shell the eggs, cut in half lengthwise.
Drop yolks into a bowl and line up whites on a platter.
Mash yolks with mayonnaise, softened truffle butter, salt, and pepper til mixture is light and fluffy. (add more mayo if necessary)
Fill whites with mixture, using a demitasse spoon, or pastry bag with wide tip.
Chill.
