Question about Gretchen's pulled pork...

I am making this for the with a larger pork shoulder (about 7#) and it is tied. Should I untie it to put the rub on and cook or do I leave it tied? The other times I have made this, the shoulder was not tied. Thanks in advance for you help!

 
my recipe is a little different than Gretchen's,I think with that time and temp, it doesn't matter?

 
I agree with Nan. Gretchen's pulled pork is not rocket science. It is ...

...slow cooked pork. Slow cooked pork.

Cook it long enough, and low enough, and the meat will fall apart. Tied or not. Spices or no.
