Question about jarred garlic...

In the last few years I have bought a few heads of garlic that, although they appeared to be white-skinned and pretty tightly closed, have had cloves that when you peel them turn out to be brown or have brown spots. Has anyone tried the jarred garlic cloves? I was thinking of getting a jar just to have on hand in case the head I was planning on using turns out to be less than great.

 
I use peeled garlic that comes in large plastic containers from Costco

It is not brined, it is not preserved, it is just peeled. I use LOTS of it and love it. I haven't purchased heads of garlic for years. I used to have to get the containers from a restaurant supply produce company but now Costco has them so I can find them easily. The brand I get is from Christopher Ranch in CA.

 
I rarely find fresh garlic which is really fresh. However, I never buy the jarred stuff as I can

smell it through the sealed jar. Where do you keep it after it's opened? Doesn't it smell up the fridge?

 
No it doesn't smell up the fridge- there is no odor that comes through the container or seal.

 
We had a discussion earlier about the garlics for sale

and I must say that I was confused about the product that Cathy is referring to. I had used the processed garlic before and didn't care for it at all. It comes in chopped, paste, and whole clove forms, it's in a liquid and has been treated to high temperatures to pasteurize and seal it.

The product Cathy is referring to is just simply raw peeled garlic. Cathy showed me her container and I was amazed since I had never seen it before. And it tasted mighty fine without all the sticky papery peel stuck all over the place from peeling having to peel it. I will certainly be on the look out for it next time I go to Costco.

 
One of our local supermarkets has fresh peeled garlic

in plastic deli-type containers. It's generally found in the produce section, and when I have bought it, it's been fine...no brown spots, sprouted cloves, or other problems.
I don;t know how long it might keep, since I buy it only when I am using a large number of cloves at once.

 
rec; sauted garlic cloves from costco

this is an excellent way to use up some of the mass quantities of garlic. it tastes very much like roasted garlic and keeps well.

Sauted Garlic Cloves

Garlic

Amount Measure Ingredient -- Preparation Method

2 Tablespoons Olive oil
40 cloves Garlic
1/2 Cup Chicken stock, water and or white wine
Salt and pepper to taste

Gently saute the garlic in the oil until lightly brown, be careful not to burn Add the liquid ( any combination of water, stock and wine will work) cover and simmer until cloves are tender
Serve on bread or crackers

Jarred Garlic

When I "need" to use the jarred-peeled garlic I stuff a piece of paper towelling in the jar and turn in upside down in the refrigerator. SueYoung in So CA.

 
I looked at these at Costco in Clearwater today, was very disappointed in the ones they had. The

use by date was May 3, or something like, I could never use them up in that length of time and they had some of the same brown spots Andrea discribed above. I will look when I go to the one in Tampa, these were really past their prime.
