Question about star anise. I would like to make a mexican cookie called anise seed borrachio cookie.

I have whole star anise. Can I remove the seeds (They are rather large) and crush them? If so would it be a stronger flavor than seeds I would buy at a store. Thanks

I think that "anise" and "star anise" are two different spices. They do have different tastes and the seed look different. I'm not sure a recipe calling for "anise" would translate to "star anise". Comments???

Yes, indeed. Anise seed is fun in cookies. Star anise is an entirely different

flavour in my opinion. I sure wouldn't want to find it in a cookie.

Anise seed tastes like sweet licorice. Star Anise has kind of a rancid heat to it and only part of the flavour being licorice.

do Mexicans actually even use star anise?

While in Grenada this past year I picked up a bunch of spices. It is truly the "Spice Island". I've been trying different recipes using the spices. I'm going to purchase anise from the store as it seems that the star anise would not be good for this recipe. Thanks!

 
Before you soak the anise seed, try toasting it in a dry pan on a burner, Gail

You will find it enhances the flavor a LOT. Doing this will not overpower the other ingredients but will just bring out the depth in the anise. Just toast it for a few minutes, cool then proceed.
