question about the angel biscuits in T&T: when making ahead and keeping in the fridge

do you keep them in a bowl and then scoop out for drop biscuits, or pat them out and cut like the regular biscuits? I guess either would be just fine. I'd like to prepare as much ahead of time as possible and wondered if they could be patted out after sitting in the fridge.

 
I always make mine the night before....

have them in the fridge on a small tray, rolled out and cut. They rise so slowly in there, I bet you could push it for another day but it might affect the flavor (might get a little sour as the yeast grows within the dough - like a sourdough).

 
Ang..how about getting them ready up to the wet ingredients.....

and stir them up night before or the morning of? I didn't check the recipe in T&T but I've been making them since the 70's and I've done it that way before. The time consuming part is done so it takes about 5 mins to stir it up and roll out on waxed paper. (and toss the mess) I think they look much nicer when cut like Steve2 suggests rather than making drop biscuits.

Ang, they definitely keep for days in the fridge

that's the beauty of this recipe. When I have houseguests in I will whip up a batch before they arrive, and then pat out individual biscuits baked fresh for breakfast. I've kept them going for as long as a week over holidays. They're very durable and I think they actually taste better after a few days in the fridge.

 
yes, thanks everyone. one more item to check off my list! Im trying not to over-prepare but

I think I am hopeless. I remember a thread we had about mothers who over-prepared and worked to make everything so perfect that they couldn't enjoy themselves and got totally exhausted. Well, I think I'm one of "those". Help!!

Re over-preparing, I think when you like everything to be home made and perfect, it's hard to get around being stressed. Especially when everyone likes something different that you "have" to make because it's a major holiday and folks like to have what they either like, are used to, or expect. smileys/frown.gif I'm lucky that I can take off Tues and Weds to prep! smileys/smile.gif
