Question for Olga_D_Ont: Can I use my KA sausage grinder for the nuts

Marilyn, do you recommend the KA sausage grinder?

We want to make South African sausage (boerewors), and the grinder would work better than the food processor, I think.

 
I have had a KA grinder since before they changed to the stainless blades they have now.

It is an excellent kitchen tool, and the sausage stuffer makes sausage making easy although you can roll sausages up in Saran wrap if you don't use casing.

 
Have had the grinder for many years and certainly recommend it. Have make hundreds of lbs of sausage

with it and never had trouble except when I tried to make too much at one time. I almost burned up the motor but it was my fault. It is an excellent grinder and the stuffer is good too.

It looks like the nuts need to be finely ground. The coarse blade might not be the best choice. Just a guess

 
Do you have a Zyllis rotary cheese grater? You could give it a test and see if it would work. It

seems similar to some old nut grinders.

 
Lana, I've only used it about 5 times in 10 years, but was happy with it.

I bought the KA kit which included the spiral blade and parts (see example at the link), but the larger meat tray was extra.

I've only made my FIL's Italian sausage, meat for sausage patties and ground chicken for Ina's meatloaf, but it worked fine for those. My hardest problem was finding real casing.
And I've STILL never found the preservative my FIL used in his recipe...I swear that is the illusive missing taste.

No....Olga's notes specifically say the nuts need to be ground fluffy and

that the food processor doesn't get them to that state.

I noticed last year when I was attempting nut rolls that my filling wasn't exactly like my mom's texture wise. She used a hand-rotary grinder and I used my Cuisinart food processor.

That's why I wanted an opinion since this cake sounds delicious, but delicate.

 
I know it says that but I'm not convinced that it wouldn't work. I don't think the KA

grinder will work if it is fluffy that is needed. In looking at other recipes, here is a FP technique used. Another didn't mention "matzo meal"--just sugar and pulsing
Place the walnuts, remaining 1/4 cup plus 2 tablespoons sugar, matzo meal, and salt in a food processor fitted with a blade attachment. Pulse until the mixture resembles wet sand, about 15 to 20 (1-second) pulses (do not overprocess).
I have a KA FP that has a small bowl where the blade and walnuts would be in contact better than the larger bowl--that could also be a part of it working in a FP. ;o)

 
Hello MarilynFL using the sausage grinder

will make the nuts very oily. The nuts must have the fluffy texture of flour and only a nut grinder can do that. A rotary cheese grater will work to. I hope this helps you.
